Bacon, Bean and Smashed Peas Salad

Serves 2-3. 


1 onion (chopped).

300g bacon (chopped).

150g baby green beans (trimmed).

150g snow peas (trimmed).

2 cups frozen peas (thawed and squashed lightly with a potato masher).

100ml extra virgin olive oil.

2-3 tbsp lemon juice.

2 tbsp each mint and basil leaves (torn).

Salt and pepper. 


Place onion in a pan and cover with water. Simmer over medium heat for 10 minutes Drain and place in a large bowl. Cook 300g bacon in a non-stick pan over medium heat until crisp. Boil baby green beans for 2 minutes. Add snow peas and boil for 30 seconds. Add frozen peas. When water boils, drain vegetables. Add vegetables and bacon onion with 100ml extra virgin olive oil, lemon juice, mint and basil leaves. Salt and pepper to taste.
