Carrot, Radish and Orange Salad 

Serves 4.


2 carrots (trimmed, peeled and very thinly sliced).

8 red radishes (trimmed and very thinly sliced).

2 oranges (peeled, pith removed and sliced).

Juice of 1 orange.

Juice of 1/2 lemon.

2 tbsp extra virgin olive oil.

Salt, pepper.

Castor sugar.

2 tbsp chopped shallots (green end). 


Place carrots, radishes and oranges in a large bowl. In a separate bowl, combine the juice of 1 orange, the juice of 1/2 lemon and 2 tbsp extra virgin olive oil. Add salt, pepper and castor sugar (to taste) and whisk until smooth. Add dressing to carrot mixture and toss gently to combine. Sprinkle with 2 tbsp chopped chives.
