Crushed Binje Potatoes

Crushed Binje Potatoes 

Serves 2-3. 

Ingredients 

500g of Binje potatoes (or Desiree).

80g of butter.

Salt and pepper.

6 tbsp of extra virgin olive oil.

3 anchovy fillets and a finely sliced.

1 clove garlic. 

Process 

Steam or boil 500g of potatoes in their jackets until tender. Peel them while they are hot and put them in a bowl. Add 80g of butter and season with salt and pepper. Crush them a little with a fork, but not too much. Mix until the butter has been well incorporated. Cover the bowl and keep warm. Heat 6 tbsp of extra virgin olive oil on a low heat and add 3 anchovy fillets and a finely sliced garlic clove. When the anchovy has melted, pour over the potatoes and serve as a side dish.
