Orange, Lemon, Lime & Olive Salad 

Serves 4. 

Ingredients 

4 oranges (peeled and thinly sliced).

1 small red onion (peeled and thinly sliced).

1/2 lemon (peeled and very thinly sliced).

1 lime (peeled and very thinly sliced).

¾ cup large kalamata olives.

2 tbsp salted capers (rinsed).

¼ cup flat-leaf parsley (coarsely chopped).

Season with sea salt and cracked black pepper.

¼ cup extra virgin olive oil. 

Process 

Combine, onion , lemon, 1 lime and olives in a medium bowl. Add 2 tbsp salted capers and  flat-leaf parsley. Season with sea salt and cracked black pepper. Drizzle with extra virgin olive oil and toss gently. Serve with barbecued salmon or ocean-trout fillets, french fries.
