Roasted Rum Pineapple

Roasted Rum Pineapple 

Serves 3-4. 


1/4 cup of water.

1 cup of sugar.

1 tsp of light corn syrup.

1 pineapple (peeled and sliced into rings).

½ tsp of vanilla.

2 small bay leaves.

4 tbsp of unsalted butter.

2 tbsp of good-quality dark rum.

Pinch of salt, 


In a wide ovenproof pan, put a 1/4 cup of water, 1 cup of sugar and 1 tsp of light corn syrup. Turn the flame to high and cook until the mixture is a deep amber-brown - about 7-8 minutes. Add pineapple rings, and vanilla and bay leaves. Place in a pre-heated 190C oven for 40 mins, basting every 10 mins. Carefully transfer the pineapple to a serving plate and keep warm in a low oven.


Whisk in 4 tbsp of unsalted butter, 2 tbsp of good-quality dark rum and a pinch of salt. Serve the hot sauce over the warm pineapple with a side of double cream.
